A big part of travel is the local food. It is never possible to reproduce your favorites when you get home - not just due to not knowing the recipes, but also the lack of availability of the right ingredients. However, with a few adjustments, and a bit of experimentation, you can get close. These are my best attempts at dishes inspired by those I have enjoyed on my travels
